Keto Banana Pudding

Pudding (I made double of the pudding recipe)

  1. In a medium sized pot, add 1 cup of heavy whipping cream, 1/2 teaspoon of vanilla exract, and 1/2 teaspoon of banana extract.

  2. Whisk together and warm it up over low heat for 7-10 minuetes. Once it is done warming up, take it off the heat and allow it to cool (to make sure the cream is hot enough, you should be able to stick your finger in for a few seconds without it getting uncomfortablely hot, but it shouldn’t be cool enough where you can have your finger stay in longer than that).

  3. Meanwhile, combine 3 egg yolks and 3 tablespoons of any kind of granulated sugar substitue. Whip this up using an electric mixer until the mixture is pale yellow.

  4. Now, add your cream to the egg yolk mixture in small batches (this is the most important step in creating your pudding, the cream must be hot enough to temper the egg yolks correctly so the pudding doens’t get lumpy later on).

  5. Once you have mixed all the cream into the egg yolk mixture, return it back to the pot and cook over low heat, stirring continually until the consistency is thick enough to coat the bag of a spoon without dripping (about 20 minutes- you MUST stir continually or else the pudding will get lumpy).

  6. Now pour the pudding into bowl through a strainer.

  7. Then take a large bowl filled with a couple ice cubes and a little water and place the bowl with the pudding inside. Stir the pudding for 5 minutes to cool the pudding.

  8. After that, place a plece of plastic wrap on the top of the pudding (to ensure that it doen’t develop of film) and another piece on top. Let this chill in the fridge for about 1-2 hours.

  9. *I made another batch of pudding (in total 2 batches for final product)

Whipped Cream

  1. Combine two cups of heaving whipping cream, two teaspoons of vanilla extract, and 2 tablespoons of a powdered sugar substitute in a large bowl.

  2. Then whip together with an electric mixer until it becomes thick and fluffy.

Assembling the Pudding

  1. Put a thin layer of pudding on the bottom of your dish.

  2. Then put a layer of keto vanilla wafers (I use ones by the brand Highkey).

  3. Then apply a layer of whipped cream.

  4. Repeat this process until you get to the top of your dish.

  5. As decoration, crumble a few of the wafers on top and…. you’re done!

Recipe Notes

*Remember to make sure your cream is hot enough

*Stir the pudding continually while it is cooking
