Keto Pecan Pie
Recipe:
Ingredients
Almond Flour Pie Crust
2 3/4 cup almond flour
1/2 cup no calorie sweetner
1/4 teaspoon sea salt
1/3 cup clarified butter(can use regular butter, melted)
1/2 teaspoon vanilla extract
Pecan Pie Filling
2/3 cup no calorie sweetner
1/4 cup no calorie brown sugar(can replace with regular no calorie sweetner
3/4 cup butter
1 1/2 cup heavy whipping cream
1 teaspoon salt
1 teaspoon maple extract
1/2 tablespoon vanilla extract
2 cups chopped pecans
1/2 cup pecan halves(for topping)
Instructions
Almond Flour Pie Crust
Preheat oven to 350 degrees
In a large bowl, combine almond flour, no calorie sweetner, and salt
In a separate bowl, combine clarified butter (or regular butter) with vanilla and the egg
Add wet ingredients to dry ingredients until it forms a crumbly dough. Set off to the side
Grease a 9.5 inch pie pan with cooking spray or butter
Press dough into pie pan, cut off excess on the edges
Use a fork to poke holes in the crust to prevent air bubbles
Bake for 10-15 until lightly golden
Take out of the oven and let cool
Pecan Pie Filling + Combining
In a large saute pan, heat together no calorie sweetner, no calorie brown sugar, and butter on medium low heat for 5-10 min until golden brown
Add heavy whipping cream and salt. Mix together until well combined
Simmer for 20-25 more minutes on medium low heat until a deep golden brown.
Removed from the heat and add maple extract and vanilla extract
Let this mixture cool enough to not cook an egg (once at this temperature, add the egg)
Add chopped peans to the bottom of the cooked pie crust, evenly spreading them out
Pour sugar mixture over top, smoothing the top with a spatula
Cover the top with pecan halves
Bake for 35-40 min until the top is golden brown and the pie is no longer super jiggly.
