Original Keto Vanilla Cake
Recipe:
Cake Batter:
1 cup monkfruit sweetner (or any no-calorie sweetner)
3/4 cup unsalted butter (softened)
8 large eggs (yolks and whites separated)
1/2 cup milk
3 1/2 cups almond flour
1 1/2 tablespoon baking powder
1 tablespoon vanilla extract
Vanilla Buttercream:
4 1/2 – 5 1/2 cups no calorie sugar
2 cups unsalted butter (softened)
1 teaspoon vanilla extract
1-4 drops gel food coloring (optional)
Instructions
Cake Batter:
Preheat the oven to 350 degrees F. Grease and line the bottom of two 9” pans with parchment paper.
In a large bowl, beat together the no calorie sugar and butter, until fluffy.
Beat in the egg yolks, one at a time, then the milk.
Beat in the almond flour, in two parts until combined.
Mix in baking powder, then vanilla extract.
In a separate bowl, whip egg whites until fluffy and airy.
Fold in egg whites with batter.
Equally divide batter into two 9 inch pans and bake for 18-22 minutes until a toothpick inserted comes out clean.
Vanilla Buttercream:
Measure out your no calorie sugar and then blend it together until it is fine (powder). **
In a large bowl, beat softened butter until fluffy. Then add no calorie powdered sugar.
Add vanilla extract. Mix until combined.
Optional- Add gel food coloring
Assemble:
After cakes are completely cool, level into two layers each.
Frost with vanilla butter and decorate however you like!
Recipe Notes
**If you don’t want to use a granulated no calorie sugar and have to blend it, you can substitute powdered no calorie sugar to save time.
