Keto Blueberry Pie
Recipe:
Ingredients
Pie Crust:
1 cup unsalted butter(melted&cooled)
4l arge eggs
1/2 teaspoon salt
3/4 cup coconut flour
3/4cup almond flour
1/4 teaspoon baking powder
1 tablespoon water
Pie Filling:
2 tablespoon arrowroot powder
1/2cup granulated sugar
2-3 cups fresh or frozen blueberries
1/2 cup water
1 teaspoon lemon juice lemon juice
Instructions
Combine all dry ingredients
Add wet ingredients to the dry (you might need to add a tiny bit more almond flour to form the dough)
Set dough off to the side
Take 1/2 of the dough and press it into a pie pan that has been sprayed with cooking oil
Put pie pan in fridge to chill
Take two silicone mats and wipe them with water to prevent the dough from sticking to it.
Roll out remain dough between the prepped silicone mats
